For the veggies, thinly slice 4 cups green cabbage and 1 cup purple cabbage, grate 1 carrot, and add 2 thinly sliced white Vadala onions. Mix it up in a bowl. You should have lots of long, thin, stringy bits. Set it aside.
For the dressing, in a separate bowl, whisk 3 tablespoons apple cider vinegar with 2 tablespoons olive oil, 1 tablespoon honey, 1 teaspoon whole, toasted Celery seed, ½ teaspoon Dijon mustard, and a small pinch each of salt and black pepper. To toast the celery seed, see above.
Pour the dressing over the vegetables and toss until everything is lightly coated. Using thongs keeps things a bit less messy.
Let the slaw rest for 20 to 30 minutes before serving. Chilling it in the fridge makes it especially enjoyable on a hot summer day. Enjoy at barbeques, picnics, or in the depths of summer.
