Organic Allspice (Pimenta dioica syn officinalis)
How to make Slow Pot Allspice Beef...
Pat a beef pot roast dry and season lightly with salt and black pepper. Brown it in 1 tablespoon of olive oil in a heavy, ovenproof pot, then remove the meat and set it aside.
Cook 1 sliced onion, 3 chopped carrots, and 2 chopped celery stalks in the pot until they begin to soften. Add 2 cups of beef stock, 1 tablespoon of tomato paste, 6 whole Allspice berries, and 2 bay leaves.
Return the beef to the pot, cover, and cook at 160°C (325°F) for about 3 hours, until fork-tender.
Add small potatoes after 2 hours of cooking.
Remove the beef from the pot, slice it, and return it to the pot. Remove the whole Allspice berries and bay leaves before serving.
The slow braise makes this dish tender, full of depth, and delicious.
