Horsetail is one of the ancient herbs of the world. In the prehistoric period, it is believed to have grown to the size of pine trees; herbal lore tells us it may still exist in that form in the remote East Australian Rainforest. In the days of the settlers its tough stems were bunched together to make scouring pads. Today, only the tender young shoots are used for tea.

Horsetail is know by many names: Shavegrass, Scouring Rush, Bottlebrush and Pewterwort. It makes an excellent tea and is known among herbalists as "nature's scalpel."

Originating in eastern Europe, Hyssop has a long history of use. Its name has been translated from the Herbrew “ezeb,” which means “a holy herb.” It was used in those ancient times to cleanse holy places.

The character of Hyssop can best be described as a combination of the aromatic herbs Thyme, Rosemary, and Savory, giving it a pleasant hot, spicy aroma and a somewhat bitter flavour.

Lemongrass is a herb grass with a strong citrus flavour and aroma that grows in many sub-tropical regions of the world, including Southeast Asia through India, Africa, Australia, and parts of South America.
