Hawthorn is found mainly in Europe, eastern Asia, and eastern North America. Its use has been growing since the 1800's. In Britain, Hawthorn was an important part of many May festivals and was known as 'May flower'. In France, Hawthorn goes by the name "l'epine noble" (a noble thorn) from the belief that the crown of thorns worn by Christ was made of its branches.

Hawthorn boasts dark-green lobed, toothed leaves and in late spring it yields clusters of lovely, sweet scented white flowers. The interaction of leaf and flower make for a taste that is sweet, yet slightly bitter.

Hibiscus is cultivated throughout the tropics; its flowers are highly prized for making jams, jellies, sauces, and beverages.

Lemongrass is a sub-tropical herb known for its strong citrus flavour and aroma. It became a popular edition to tea blends in the 1970s and was quickly accepted in Europe.

Traditional methods of making Honeybush involve four characteristic processing steps: harvesting, cutting, "fermentation" (oxidation) and drying.

Horsetail is one of the ancient herbs of the world. In the prehistoric period, it is believed to have grown to the size of pine trees; herbal lore tells us it may still exist in that form in the remote East Australian Rainforest. In the days of the settlers its tough stems were bunched together to make scouring pads. Today, only the tender young shoots are used for tea.

Horsetail is know by many names: Shavegrass, Scouring Rush, Bottlebrush and Pewterwort. It makes an excellent tea and is known among herbalists as "nature's scalpel."

Originating in eastern Europe, Hyssop has a long history of use. Its name has been translated from the Herbrew “ezeb,” which means “a holy herb.” It was used in those ancient times to cleanse holy places.

The character of Hyssop can best be described as a combination of the aromatic herbs Thyme, Rosemary, and Savory, giving it a pleasant hot, spicy aroma and a somewhat bitter flavour.

For over 2000 years, Lemon Balm has been cultivated in the Mediterranean region and can be recognized by its honey-lemon scent and distinct lemon taste. It is presently used throughout the modern world to add zest to teas and herbal medleys and also makes a nice cup of tea all on its own.
